Homemade Creamy Cajun Chicken & Smoked Sausage

Ingredients - Serves 2
1/2 bag or box of your pasta of choice (Used fusilli)
Olive oil
Pinch of salt
Fresh parsley (chopped) for garnish
Any Cajun style andouille smoked Sausage (Cook this separately from chicken)

Chicken Seasoning
2 large chicken breast diced
1 tbsp Paprika 
1 tbsp garlic Puree
1 tbsp of cajun seasoning
1 tbsp black ground coarse pepper
1-2 teaspoons cayenne pepper

Cream Sauce
1 white onion (finely chopped)
1 tbsp butter
270ml of double cream/heavy cream (Elmlea cream cream tub was used)
1 tsp of sugar 
2 tsp tomato paste
1 tbsp black pepper
1 tbsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp cayenne pepper
Handful of grated cheddar and mozzarella mix
Parmesan cheese

Steps
1. Fill a large pot halfway with water
2. Add a pinch of salt and bring water to a boil
3. Add pasta and cook until al dente, drain pasta, and coat olive oil (set aside)
4. Clean, dice into cube, and season with the chicken seasonings listed above.
5. Drizzle chicken with olive oil.
6. Heat a skillet with olive oil and grill chicken for 4 minutes on each side or until golden.
7. Cut up sausage, once chicken is nearly done add chopped sausages and fry off for about 2 minutes with the chicken so it gets coated in the chicken juices. (OPTIONAL: Add in garlic butter)
8. If the chicken and sausage start to stick you can add a drizzle more of oil. 
9. Once the chicken is fully cooked through and the sausage is browned off (the sausage is already cooked so please do not overcook) remove both from the pan and set aside.
10. In the same pan, heat your tbsp of butter over a medium heat.
11. Once the butter starts to melt add in your chopped onion and saute for 2 mins or until golden.
12. Now add in your cream and turn the heat down all the way to low (you do not want to boil your cream or burn it). 
13. Add smoked paprika, garlic powder, onion powder, tomato paste and that little bit of sugar. 
14. Stirring well and tasting the mixture to ensure there is a good flavor. 
15. Next, incorporate your grated cheddar and mozzarella mix, then finally the parmesan cheese. (If the mixture becomes a little thick after adding the cheese add a bit of water.)
16. Flavor add your chicken and sausage back into the pan and coat with the sauce 
17. Lastly add your pasta and mix, mix, mix to ensure every last pasta grain is coated in the sauce, garnish with parsley heat up the sauce, set it aside and poured all over the pasta.
