Ingredient List
- 4 short ribs
- 1 cup heavy cream
- 1 ½ cup milk
- 2 cups of sharp cheddar
- 1 cup of Monterey Jack
- 1 cup of Gouda
- 1 stick of butter
- 1/4 cup red wine
- 1/2 cup ketchup
- Tablespoon of apple cidar vinegar
- 1 tablespoon of tomato paste
- Sprig of Rosemary
- Sprig of thyme
- 4 cloves of garlic
- 1/4 cup brown sugar
- 2 tablespoons of paprika separated
- 1 tablespoon of garlic powder
- 1 table spoon of chili powder
- 2 tablespoons of black pepper separated
- 2 teaspoons of salt separated
- Tablespoon of maple syrup
- Tablespoon of oil
- 1/4 cup of flour
- 16 oz elbow macaroni
- Onion straws and chives to top (optional)
Steps
1. In a bowl combine brown sugar,
tablespoon of paprika, chili powder,
teaspoon of salt and pepper to make a dry rub.
2. Rub your maple syrup and dry rub on
your short ribs reserving the unused dry
rub
3. Add tablespoon of oil to Dutch oven
5. Brown your short ribs
6. Add the red wine, tomato paste,
rosemary, thyme, and garlic cloves.
7. Cover and braise in the over at 300 degrees for 3 hours, periodically
basting .
8. After the second hour remove the
garlic cloves and grate the cheese.
9. In a saucepan, melt the butter.
10. Add the flour and make a roux.
11. Add roasted garlic and sautee 30
seconds.
12. Add the remaining seasonings and teaspoon of ground mustard.
13. Add cream and milk and bring to
light boil.
14. Remove from heat and fold cheese reserving ½ cup
15. Cook macaroni to al Dente and drain.
16. Add cheese sauce to macaroni and
coat.
17. Place in baking dish and top with remaining cheese.
18. Bake at 350 for 20 minutes
19. Remove short ribs
20. On low heat, add ketchup, remaining
dry rub, vinegar
21. Re- add short ribs and baste
22. Remove Mac and cheese
23. Add the short ribs and your favorite
toppings and serve hot
