Homemade Birria Taquitos

Ingredients
2 Guajillo Chile Pods (In video it said 8 that was a mistake)
8 California Chile Pods
8 Padilla-Ancho Chile Pods
Boneless Beef Chuck Roast
5 Garlic Cloves
3 cups of water
Oregano
Cilantro Bolita Coriander
Ground Cumin
Chicken Flavored Bouillon
Tomato Chicken Flavored Bouillon
Orange
Bay leaves
El Comal Yellow Corn Tortillas
Mozzarella cheese

Steps
1. Remove seeds from chile and boil them.
2. Cut beef into cubes and boil for 20 minutes.
3. In a blender add 5 garlic cloves, 3 cups of water, boiled Chile, Coriander, oregano, 1 tsp of ground cumin, (Chicken Flavored Bouillon and
Tomato Chicken Flavored Bouillon - add amount to your taste) and blend.
4. Drain blended chile on beef.
5. Juice a whole orange on beef.
6. Add 2 bay leaves to beef with Chile
7. Place beef in a pressure cooker for 45 minutes.
8. Get a scope of the beef juices in a separate boil then add onion, cilantro, and lime.(This will be the dipping sauce as shown in the video, so save as much as you want)
9. Drain the rest of the broth and shred the now cooked beef.
10. Add it to yellow corn tortillas and cheese.
11. Fry and enjoy!
