Homemade Cracked Crab & Tiger Shrimp Pasta

Serves 6 -8
Ingredients
4 clusters Snow Crab Legs
17 oz Mafaldine Pasta
1 Ibs Jumbo Shrimp
1 tablespoon Sea Salt
1 tablespoon Cajun Seasoning
1 Sprig Rosemary
2 tablespoons Chopped Parsley
Aldine Sauce
2 tablespoons Lemon Juice
3 cups Heavy Cream
10 Cherry tomatoes
2 cups Fontina Cheese
1 cup Parmesan Cheese
1 tablespoon Minced Garlic
½ tablespoon Smoked Paprika
1 tablespoon Cajun Seasoning (for Sauce)
1 stick Butter

Steps
Mix 2 cups fontina cheese and 1 cup parmesan cheese in a bowl and
set aside.

Bring 6 cups of water, and 1 tablespoon of salt to boil, add your pasta
and boil until al dente (using the instructions on the pasta).

Place a steam basket at the bottom of a large stockpot with 1 cup of
water. Add as many crab legs as your pot will accommodate and
close the lid tightly. Bring the water to a boil then cover and steam
cook snow crab clusters until fragrant and steaming hot (about 5
minutes for thawed or 10 minutes for frozen clusters). Using kitchen
shears carefully remove the meat from the warm snow crab legs.

Peel and devein shrimp, season with 1 tablespoon cajun seasoning.
In a saucepan, add one teaspoon olive oil and 1 tablespoon butter
warm until the butter begins to sizzle and bubble, add shrimp and
cook for two minutes on each side. Before flipping the shrimp, brush
them with the twig of rosemary, flip and leave the rosemary on top of
the shrimp. Remove shrimp and rosemary, place on a separate dish,
and set aside. Using low to medium heat add 1/4 butter stick of
butter, 1 ½ tablespoon minced garlic, and 10 cherry tomatoes to the
pan, simmer for 30 seconds, add 3 cups heavy cream, and the
fontina/parmesan cheese mix whisk and stir. Once the cheese is fully
melted continue stirring, adding to the cheese sauce 1 tablespoon of
cajun spice blend, a pinch of salt , 2 tablespoons lemon juice, and 1/2
tablespoon smoked paprika.

In a separate pan, using medium heat add 1 tablespoon of butter
and sauté the cracked snow crab legs with half of the chopped
parsley for 2 minutes.

Bringing it all together!

Combine drained cooked Mafaldine Pasta and cheese sauce in a
serving dish top with shrimp and crab meat!!
